DEAR MELBA: This is a great make-in-advance bread.

ONION AND HERB BREAD

•1 teaspoon minced onions

•1/4 cup butter or margarine

•1 teaspoon chopped fresh basil

•1 teaspoon chopped fresh oregano

•1 loaf French bread

In small skillet, saute onions in butter. Stir in basil and oregano. Remove from heat.

Split bread horizontally and spread with butter-herb mixture. (This can be prepared in advance to this point.) To serve, bake uncovered, in preheated 350 F oven until golden, about 10-to-15 minutes. Slice at angles to serve.

EVERY HAIR ON YOUR HEAD MEANS SOMETHING

DEAR MELBA: Do you ever get tired of deciding what your hair will look like when you get up in the morning? Be thankful you have some. I don't remember where I got this, but I think your readers will enjoy it.

ATTITUDE IS EVERYTHING

A woman woke one morning, looked in the mirror and noticed she had only three hairs on her head "Well," she said, "I think I'll braid my hair today." So she did and had a wonderful day. The next day, she awoke, looked in the mirror and saw she had only two hairs on her head. "Hmm, I think I'll part my hair down the middle today." She did and had a grand day. The next day, she awoke, looked in the mirror and noticed that she had only one hair on her head. "Well, today, I'm going to wear my hair in a ponytail." She sort of did, and she had a fun, day. The next day, there wasn't a single hair on her head. "Yay, I don't have to fix my hair today!"

Attitude is everything. Be kinder than necessary, for everyone you meet is fighting some battle. Live simply, love generously, care deeply and speak kindly. Life isn't about waiting for the storm to pass, it's about learning to dance in the rain. It's okay not to be satisfied with who are and where you are, but as you continue to strive for improvement, enjoy the dance.
