THE MAIN INGREDIENT MUST BE?

DEAR MELBA: I've made some changes from the original recipe, and made up the name of this rum cake myself.

PUN RUM RUM CAKE

Cake

•1 box (15.25 ounces) butter cake mix

•3 eggs

•8 tablespoons butter

•2/3 cup water

•1 cup rum

•1 large box (5.9 ounces) instant canilla pudding mix

Preheat oven to 375 F. Spray Bundt pan with non-stick spray.

In large mixing bowl, combine all ingredients. Pour into prepared pan. Bake 40-to-45 minutes.

About 20 minutes before cake is finished baking, make glaze.

Glaze

•1 cup sugar

•1 cup rum

•1 cup water

•8 tablespoons butter

In large saucepan, bring sugar, rum, water and butter to boil over low heat. Boil 5-to-10 minutes, stirring constantly.

Remove cake from oven when cooked. Leave cake in pan and gently prick holes in the cake. Slowly pour glaze over, making sure to fill all the holes while the cake and the glaze are both still hot. Leave cake in pan at room temperature until completely cooled. Remove from pan to serving plate. Allow to set several hours before serving.

SANDWICHES ARE GOOD ANYTIME

DEAR MELBA: I made these for New Year's and thought the recipe should be shared.

HAM AND MOZZARELLA SANDWICHES

•1/2 cup mustard

•1 cup mayonnaise or salad dressing

•1/4 pound cooked ham, diced

•1/2 pound mozzarella cheese, shredded

•2 tablespoons dried onions

•2 tablespoons chopped parsley

•1/4 teaspoon Worcestershire sauce

•1/2 teaspoon black pepper

•1/2 cup sour cream

•1 loaf unsliced bread

•Melted butter

In small dish, stir together mustard and mayonnaise. Set aside.

In food processor, process ham and cheese until coarsely ground. Add dried onions, parsley, 1-tablespoon of the mustard-mayonnaise mix, Worcestershire sauce, black pepper and sour cream. Process until mixture is blended. Chill.

Trim bread and cut in fourths horizontally. Brush each with remaining mustard-mayonnaise mixture. Spread each with ham mixture and top with bread slices. Slice in serving sizes and arrange on serving plate. Wrap with plastic wrap and refrigerate. Yields about 18 sandwiches.
