Remodeling announced for Saturn Grill

Chef Joseph Royer has endured a trying couple of years, but he's not done by a long shot.

Today, he announced major renovations to his only remaining location, which happens to be the original. Plans are to increase seating capacity and improve furnishings. An artist's rendering shows improved dining area.

Royer embarked on an ambitious attempt to expand and elevate the concept, opening a location near Mercy Hospital five years ago then following with another spot in Midtown in late 2012. The midtown location included full bar with signature cocktails Royer desigend, full service and an expanded menu.

Unfortunately, the location suffered through construction to roads all around it not to mention limited visibility of the restaurant from the street. The location closed last year, leaving a space that will be great five years, from now but at the time remains problematic.

So, Royer is focusing on the spot where his popular fast-casual concept began in Nichols Hills Plaza. Even that location has suffered some unforeseen problems with construction and uncertain ownership. Now that Nichols Hills Plaza has been sold, the future looks bright and Royer is acting accordingly.

In a release, Royer said work will not affect service because work will be done Sundays when the restaurant is usually closed.

I look forward to seeing what menu changes Joseph has in mind, especially if it includes the fried polenta and the vegan meatballs. He remains one of the market's most gifted and creative chefs, so his success will be our good fortune.
