#Healthy65 holiday challenge: Seeking a better vegucation

Just because you eat a vegan diet does not mean you’re eating a healthy diet. 

Two years ago, I decided to try a vegan diet after watching the documentary “Vegucated.” I thought it might help with my fitness level and overall health for roller derby. And even though, I’m in better shape now compared to then, I still find myself wanting to clamp down on my food choices even more.

A lot of people might think vegans only eat lettuce and a few other leafy selections. So wrong.

For one, we need protein, which we can get from beans, lentils, nuts, etc. And second, we also have a lot of fast food options. In fact, I’m pretty sure I had a higher intake of soy, tofu and bean burritos in the first year than greens.

So, when reporter Juliana Keeping came up with the #Healthy65 idea, I knew it was a chance to push myself to eat more green vegetables like broccoli, celery and the dreaded spinach.

I started out by fixing myself a salad of romaine lettuce to take to work every day. From there, I found a tasty balsamic vinaigrette dressing and started sprinkling in more spinach with the romaine lettuce. Soon, I realized the spinach taste, or lack thereof, didn’t really bother me.

It has been about a month since I really made the change, and I definitely feel better and have more energy. I plan to do this consistently throughout the challenge, trying out new vegetables and working them into my favorite dishes.

I’m just taking it one day and salad at a time.
